"I have this philosophy of, 'You take me at face value; I'll meet you and honor you as you are.' In the wine department it's the same: 'Don't look at the label or shiny objects and all that. Whatever you have in the glass, see what is there.' What kind of story is this wine telling you? The client: What is the client telling you? Or what is the client's posture? And how can you start the flux of conversation from the client and maintain it?"
